No foil cooking

Sorry to all those wishing that I would move on from my silver foil issues and blog about something else, but I can’t resist telling you about the eco cooking method used by one reader, the lovely Jill Pendleton. Thank you Jill for sending me these pictures which illustrate how easy it is to bake fish without using reams of silver foil. By simply using a second heatproof dish to cover the fish, the same effect is achieved and it stops the fish drying out. Happy also to see a butter wrapper being used to its full potential. That’s a habit I picked up from my mum, storing folded up butter wrappers in the door of the fridge – very useful for greasing baking trays and cake tins too.

Hi there, The fish certainly was sustainable. I build and manage a website for one of England's top anglers. In exchange he arrives now and then with a bagful of fish for the freezer. This little beauty came from the River Teign that flows about half a mile away. Oh and by the way - the butter paper was off English butter - of course

Thanks for the photograph of the dead fish. It has completely reinforced my longstanding aversion to eating the carcass of any animal, bird or fish.

I love this idea thank you for sharing.
I just wrote a letter to the SC Johnson company shaming them for their new product zip 'n' steam bags which they advertise as use and toss. We need more sustainable ideas like this one!!
